My kids are PICKY.

Especially Kenzi, she has some sensory processing issues and food textures are very hard for her. If she gets something unexpected or the texture deviates too much suddenly she will instantly throw up. Sometimes she just gets the ick and throws up anyway.

Cooking for them, especially on a budget, can be such a challenge. These burritos though, are a solid go to. I know they’re not authentic or fancy or eye catching but they come together in about 15 minutes, they get the protein and the fiber they may have missed through the day and they love it so for me they’re a win! Aaand if you buy in bulk like I do they’re even cheaper.

Recipe:

1lb ground beef, turkey or meat substitute

1 can beans of choice, any color would work

1 c cooked rice (I almost always use leftovers)

1 packet taco seasoning

1/2 bottles taco sauce (about one cup)

5 oz cheese of choice

10 carb friendly wraps

-Brown ground beef in large pan set to medium high

-Add taco seasoning per package directions

-Add can of beans, cooked rice, and 1/2 bottle of taco sauce and cook until no longer runny

-Assemble burritos with 1/2 oz of cheese and 1/3 c filling in each

Serving size 2 burritos, makes 5 servings

554 calories, 41g protein, 34g fiber per serving
