#### For the Crust:
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup sugar
#### For the Cheesecake Filling:
- 16 oz cream cheese, softened
- ¾ cup sugar
- 1 tsp vanilla extract
- 2 large eggs
- ½ cup sour cream
#### For the Cookie Dough:
- ½ cup unsalted butter, softened
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 tsp vanilla extract
- 1 cup all-purpose flour (heat-treated)
- ½ tsp salt
- ½ cup mini chocolate chips
**Instructions:**
1. **Preheat the Oven:** Preheat your oven to 325°F (160°C).
2. **Make the Crust:** In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool.
3. **Prepare the Cheesecake Filling:** In a large bowl, beat the softened cream cheese until smooth. Add sugar and vanilla, mixing until well combined. Add eggs one at a time, mixing on low speed. Finally, stir in sour cream until smooth.
4. **Make the Cookie Dough:** In another bowl, cream together the softened butter, brown sugar, and granulated sugar. Mix in vanilla. Gradually add flour and salt, mixing until combined. Fold in mini chocolate chips.
5. **Assemble the Cheesecake:** Pour half of the cheesecake batter into the cooled crust. Drop spoonfuls of cookie dough on top, then pour the remaining cheesecake batter over it. Swirl gently with a knife to create a marbled effect.
6. **Bake:** Bake for 55-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.
7. **Cool and Chill:** Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, or overnight for best results.
8. **Serve:** Remove from the springform pan and slice. Enjoy your delicious cookie dough cheesecake!
