Any who, lemonbabes, tonight I made Chicken & Spinach Alfredo … and it was amazing, if I don’t say so myself
• 3 large chicken breast cut in half (hamburger style)
- season to your liking but allow a minimum of 1 hour marinating time before pan searing
• 1 Bag of frozen chopped spinach
- I used the great value brand, but this goes in the beginning of the sauce (trust the process)
• 1 box of rotini noodles
- Cook until done, I run mine under cold water, since I cook my noodles first.
So as your chicken is marinating/ cooking you can start on your sauce
3 tbsp of unsalted butter / 1 pack of cream cheese / 1 carton of heavy cream / I used old bay seasoning / Parmesan & mozzarella cheese (you can add a store brought can of Alfredo sauce to this base) / frozen spinach
Let it come to a slight boil, add in your diced chicken & noodles back to sauce… let it cook for about 5 minutes
And yah done … this meal can also be cooked in one pot just boil the pasta first, chicken next, and sauce last
