Tzatziki is one of my favorite easy meal prep items that I make. It pairs so well with meat, seafood, veggies, or even crackers. It’s also a great way to sneak some protein into a meal. I like to use full fat Greek yogurt for a high protein option that is super flavorful, but you can also use 2% or nonfat yogurt or even a coconut yogurt if you’re dairy free!

Recipe:

• 1 1/2 cups of yogurt

• 2 small Persian cucumbers - chopped

• 1/4 cup of chopped dill

• 1 small clove of garlic - minced

• juice of 1 lemon

• sea salt to taste

Instructions:

Mince the garlic and add it to a bowl with the lemon juice. Let the garlic and lemon sit for 10 minutes to mellow out the harshness of the garlic. Meanwhile, chop your cucumbers and dill. Add the yogurt, dill, and cucumbers to the lemon and garlic and stir well to combine. Add salt and taste and adjust as necessary.
