Welcome to Episode 4 of my salad series, where I show you that salads don’t need to be boring!🥗 Today, I’m bringing you my take on the Crispy Rice Salad🥒
If you haven’t had this one yet, prepare to be obsseded🤩
Ingredients:
For the crispy rice:
• 1/2 cup uncooked basmati rice (about 1 1/2 cups of cooked rice)
• 1 tbsp of curry paste
• a drizzle of olive oil
For the salad:
• 1 1/2 cucumber, diced
• 1/2 cup of green onions, chopped
• 2 avocados, diced
• 1 Fresno pepper (optional) adds a little bit of spicy
• 1/4 cup of fresh cilantro, chopped
• 1/2 cup of roasted peanuts
For the dressing:
• 1/4 cup of low sodium soy sauce
• Juice of 1 lime
• 2 garlic cloves, minced
• 1/2 tsp of grated ginger
• 1 tbsp of honey @localhivehoney
Instructions:
1. Spread the cold, cooked rice on a baking sheet, spread evenly in one layer.
2. Add 1 tbsp of curry paste, drizzle olive oil and combine until everything is well coated.
3. Bake in the oven at 350°F for 25-30 minutes or until golden brown and crispy.
4. Make the dressing: Whisk together soy sauce, lime juice, honey, garlic and ginger.
5. In a large mixing bowl, combine the cucumber, green onions, Fresno pepper, cilantro, avocado, roasted peanuts and the crispy rice once ready. Pour the dressing over the salad and toss well to coat everything evenly.
6. Pair with your favorite protein for a full meal and enjoy!🍚🥒
