Crunchy romaine, savory Parmesan, crispy croutons and juicy grilled chicken - all tossed together creating the perfect salad bowl!

Ingredients:

• 1 head romaine lettuce, washed and chopped

• 1/2 cup croutons

• Grilled chicken breast, in cubes

For the dressing:

• 1/2 cup of avocado mayo or light mayo

• 1 garlic clove, minced

• Juice of half a lemon

• 1 tsp of soy sauce

• 1/4 cup of olive oil

• 1/4 cup of Parmesan cheese

• 1-2 tbsp of water, depending on desired consistency

• Salt and pepper to taste

Instructions:

1. In a small bowl, whisk together the mayo, olive oil, soy sauce, lemon juice, Parmesan cheese, salt and pepper to taste and water. Adjust the water depending on desired consistency. Set aside.

2. Season the chicken breast with salt, pepper, paprika, garlic powder. Grill the chicken on a pan over medium-high heat, Cook for 6-8 minutes on each side or until cooked through and golden brown. Let rest for a few minutes before cutting in cubes.

3. In a large bowl, combine the chopped romaine lettuce, croutons and grilled chicken. Drizzle the dressing over the salad, toss gently to coat evenly.

4. Serve the Caesar salad and garnish with more Parmesan cheese and freshly ground black pepper. Enjoy!
