Soup season is the perfect time to enjoy a comforting bowl of creamy tortellini soup. Here is the recipe👇🏻👇🏻

Ingredients:

• 1/2 yellow onion

• 1 leek

• 1 celery stalk

• 1 tbsp minced garlic or 3 garlic cloves chopped

• 2 tbsp olive oil

• 1 tbsp butter

• 28 oz diced tomatoes

• 4 cups (32oz) of chicken broth

• 1 cup of Parmesan cheese (grated)

• 16 oz of tortellini (I used @wholefoods brand)

• 1 cup of heavy cream

• 1 Rotisserie chicken (Shredded or chopped) @wholefoods

• 1 tsp of salt (or to taste)

• 1 tsp of pepper (or to taste)

Optional: Garnish with chives or basil

Instructions:

1. Heat the olive oil and butter in a large pot over medium heat. Add the finely chopped onion, leek, celery and sauté for about 3-4 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

2. Pour in the diced tomatoes, chicken broth, salt and pepper to taste and bring it to a bubble.

3. Add the Parmesan cheese and reduce the heat to low. Let it simmer for 30 minutes uncovered.

4. Add the cheese tortellini to the pot and cook per package instructions. If you’re using fresh tortellini, it will usually cook in about 4 minutes.

5. Once the tortellini is cooked, add the heavy cream and combine well.

6. Add the shredded chicken, combine well and adjust the seasoning if needed. You can add more salt, pepper or Parmesan cheese to suit your taste.

7. Serve the creamy tortellini soup into bowls, garnish with grated Parmesan cheese and chopped chives if desired.
