Summer Harvest Salad🍑🌸

Welcome back to Episode 2 of my Salad series, where I show you that salads don't need to be boring!

Today, we're making a Summer Harvest Salad

The perfect blend of sweet, savory and creamy, all in one bowl

Ingredients:

• 4 cups of fresh arugula

• 5 slices of prosciutto

• 1 ball of burrata cheese

• 2 fresh nectarines, sliced

• 1 cup of cherry tomatoes

• Drizze of olive oil

• 1 tsp of coconut sugar (optional)

• Salt and pepper to taste

Instructions:

1. Preheat your oven to 400°F

2. In a baking dish, add the sliced nectarines and cherry tomatoes, drizzle olive oil and coconut sugar. Bake for 20-30 minutes.

3. In a large salad bowl, add the fresh arugula, slices of prosciutto and the baked nectarines and cherry tomatoes. In the middle, add the burrata cheese.

4. Drizzle the salad with olive oil, a little bit of salt and pepper and enjoy!
