Ingredients:
• 1/4 cup chia seeds
• 1 cup coconut milk or milk of your preference
• 1 mango
• 2 tbsp honey
Instructions:
1. In a mixing bowl, combine the chia seeds and milk. Mix well. Cover and refrigerate to set for 30min-1 hour until the chia seeds absorb the liquid and thicken the pudding.
2. Place the diced mango and honey in a blender @ninjakitchen or food processor. Blend until the mango is smooth and forms a purée.
3. Spoon a layer of chia pudding into the glass, carefully spoon the mango puree on top of the chia, repeat the process. Top with mango chunks.
