Filling: (all ingredients at room temp)

680g Philadelphia cream cheese

1 cup sugar

4 eggs

2 egg yolks

1/2 tsp vanilla extract

1 vanilla bean

Crust:

16 digestive biscuits

1/4 cup brown sugar

65g melted butter

Place the biscuits in a food processor until finely ground. Add the brown sugar and melted butter and mix until everything is combined. Bake in a preheated 350 F oven in a 9 inch spring form pan for 10-15 min or until golden brown.

Set aside and let it cool to room temperature.

Wrap the bottom and upsides of the pan with a triple layer of foil.

To prepare the filling, beat the cream cheese with the sugar on high speed until creamy. Add in the eggs on at a time while on low speed.. Add the egg yolks, vanilla bean, and vanilla extract, beat on high speed for a couple of seconds.

Place the filling into the baked crust and place the pan in a large roasting pan and fill the roasting pan halfway with water. Place the roasting pan in the oven and bake at 350F for 55 min. Once done, remove from the water bath carefully, remove the foil from the pan and place on a cooling rack for a couple of hours until cooled to room temperature. Do not open the sides of the pan yet. It needs to be refrigerated and have set overnight.
