Korean cucumber salad (oi muchim)

When I crave something salty, spicy and fresh this is my go to snack. Oddly enough, it hits the spot when I’m craving salmon nigiri. I usually eat it on its own or enjoy it with rice if I want a filling dinner. Add as much saltiness, sweetness or spicy as you want to customize yourself but this is usually how I do it!

Ingredients:

🥒 2 mini cucumbers

🥒 3 tbs soy sauce

🥒 3 tbs gochugaru (Korean red pepper)

🥒 1 tbs rice vinegar

🥒 1 tbs sesame oil

🥒 2 tbs brown sugar

🥒 1/4 while onion

🥒 2 sprigs of green onions

🥒 2 cloves of garlic

Direction:

1️⃣ Using chopsticks on either side, cut cucumbers diagonally, without cutting all the way through. Then flip over and cut vertically! It should make a really fun spiral! Then chop up into bite sized pieces.

2️⃣ Sprinkle salt all throughout cucumber crevices to draw out any moisture! This helps the cucumber soak up all those good flavors without diluting it with water. Let it sit for 5-10 minutes while preparing your other ingredients.

3️⃣ In the meantime, chop up all the other veggies. Mince the garlic, slice the white onion and cut green onions on a bias.

4️⃣ When the cucumbers are done sweating, rinse the salt off under cold water and pat as dry as you can. I like to squeeze them a little in a paper towel or a clean dish towel to rough them up a bit.

5️⃣ Throw cukes in a bowl along with the onions, garlic, soy sauce, rice vinegar, gochugaru, sesame oil and brown sugar. I usually add sesame seeds on top but I didn’t have any.

6️⃣ Serve with rice if you’d like and enjoy!
