Sweet Potato Blackberry Grilled Cheese Sandwich
Ingredients:
- 2 slices of bread
- Butter
- Cheese (your choice, e.g., cheddar or mozzarella)
- 1 sweet potato, peeled and diced
- Nutmeg, to taste
- Cinnamon, to taste
- Salt, to taste
- Handful of fresh blackberries
Instructions:
1. Melt Butter:
- In a pan, melt a generous amount of butter over medium heat.
2. Toast Bread:
- Place the bread slices in the pan and toast them on both sides until golden brown.
3. Add Cheese:
- Flip the bread and add cheese to one side of each slice. Allow the cheese to melt slightly.
4. Cook Sweet Potato:
- Move the bread off to the side of the pan. Add the diced sweet potato to the same pan.
- Season the sweet potato with nutmeg, cinnamon, and a little bit of salt.
- Cook and stir until the sweet potato is soft and well-seasoned.
5. Prepare Blackberries:
- Mash the blackberries using a fork or your hands until they are slightly crushed but still chunky.
6. Assemble Sandwich:
- Once the sweet potato is cooked, place it on top of the melted cheese on one of the bread slices.
- Spread the mashed blackberries over the sweet potato.
7. Finish Grilling:
- Place the other slice of bread, cheese side down, on top of the blackberries and sweet potato.
- Press down gently and grill the sandwich for another minute or until the cheese is fully melted and the bread is crispy.
8. Serve:
- Remove the sandwich from the pan, cut it in half, and serve warm.
