If you’ve never tried Souffle Pancakes, you’re in for a treat! They may be of a similar shape as regular pancakes, but in my opinion, in terms of taste and texture, the two versions of the popular breakfast food have little in common. Souffle pancakes are super eggy, light, and springy. While I personally prefer traditional pancakes, I do think souffle pancakes are worth trying to see for yourself, and here are three spots I recommend for doing so.

Flipper's is a buzzy breakfast spot in Soho that specializes in souffle pancakes. You can order them plain like I did, or with toppings. They are light, springy, and sweet- everything that you’d expect from a souffle pancake. They don’t take reservations, and lines here get long, so definitely plan to come early, or to wait.

Vert Frais is a new restaurant in Long Island City with an eclectic menu (think: ramen noodles, and souffle pancakes). We tried a few different things here, and were impressed by them all. For starters, the Souffle Pancakes had a great, springy but not too airy texture, a sweet but not overpowering flavor, and were topped with a great matcha glaze. We loved the Japanese omelet, and the ramen was great too!

Softbite | Brunch & Soufflé Pancakes is located directly across the street from Vert Frais. It’s a bright, open space with modern, eclectic furniture. They have a few different version of souffle pancakes on their menu. We tried the matcha, which were topped with a matcha glaze and served with a side of vanilla soft serve. They pancakes were jiggly, soft, and sweet.
