Refreshing Peach Summer Salad 🍑☀️

PEACH CUCUMBER SALAD

Makes four servings. This would be great for a bbq side dish or served with some chicken

1 English cucumber cut into fourths

2 large peaches, pitted and cut up

1/4 cup feta cheese (can always add more)

6 mint leaves, finely chopped

1 cup cherry tomatoes

Dressing: mix together

4 tbsp olive oil

2 tbsp champagne vinegar (you can also use white wine vinegar)

Garlic powder

2 tsp honey

1 tsp lemon juice

Salt & Pepper

1. Cut up cucumbers, tomatoes, peach and mint and combine

2. Add in feta cheese

3. Mix together dressing in a mason jar and shake

4. Pour dressing over salad and stir

5. Enjoy!
