Simple Cheesy Orzo with chicken meatballs

**The pickled onions are optional

Cook your orzo in 4 cups chicken stock, 2cups water(following package directions)I whip about a tablespoon to two tablespoons of heavy whipping cream with softened goat cheese. Once the orzo is cooked(do not need to drain), add your whipped goat cheese mixture, add mozzarella or Parmesan (I prefer fresh but whatever you have will work). Combine. Add your meatballs and salt and pepper(I like crushed red pepper sometimes too). I like the sweetness of the pickled onions with the spicy chicken meatballs. But those are optional. You can also do grilled chicken or no meat too!
