You know what sweet flavor I barely see anymore, BUTTERSCOTCH! Where oh where have you been?! I was recently browsing through Nick Digiovanni’s latest book and I saw he had a recipe for butter toffee bars, but I had this idea of using butterscotch instead to make these Butterscotch Bars! 🧈
Oh man, were these bars excellent with butterscotch! Definitely give this a whirl and let me know what you think! 😋
Ingredients 🛒
• 1/2 cup unsalted butter, room temperature
• 1.5 cups flour
• 2 tsp baking powder
• Pinch of kosher salt
• 1 cup sugar
• 1/2 cup brown sugar
• 2 eggs, room temperature
• 1 tsp vanilla extract
• 1 cup butterscotch chips
Directions ✍️
• Preheat oven to 350F.
• Butter a 9x13 inch baking dish.
• Into a medium bowl, sift the flour, baking powder, and salt.
• Take out a stand mixer and add the paddle attachment. Beat the butter, sugar, and brown sugar together until creamy. Add the eggs and vanilla and mix together.
• Slowly add the dry ingredients while the mixer is on running until combined. Stir in the butterscotch chips.
• Pour the batter into the buttered pan and spread to an even thickness.
• Bake for 30 minutes.
• Allow the bars to cool for at least 10 minutes before slicing into squares.
• Serve up and enjoy!
