Spice and pasta all come together in this one pan flavor explosion in my Sausage & Chorizo Pasta! 💥
This is by far one of the tastiest Mexican/Italian pasta’s I’ve ever had! The sauce has a great kick of flavor from the chili lime powder, and the tomato paste gives you that classic tomato sauce vibe! I used chicken sausage and soy chorizo that easily pack a punch of spice! The crowning glory is a heavy sprinkling of cotija cheese yummmm!

Ingredients 🛒
• 3 tbsp extra virgin olive oil, divided
• 8 oz rotini pasta
• 11 oz chicken burrito sausage, sliced
• 1 red onion, chopped
• 12 oz soy chorizo
• 1/2 tsp dried oregano
• 1 tsp chili lime powder
• 3 garlic cloves, minced
• 1 tbsp tomato paste
• 1 cup chicken broth
• 1 lime, juiced
• 1 tbsp green onion, sliced
• 1 tbsp cilantro, chopped
• 1/4 cup cotija cheese, crumbled
Directions ✍️
• Cook pasta according to package instructions.
• Into a large sauté pan add in the olive oil over medium heat. Add the onion and cook for 3 minutes.
• Add in the sliced chicken sausage, allow to build a bit of a crust on both sides. Remove the sausages from the pan and place into a bowl for later.
• To the pan add in the soy chorizo, allow it to cook through, 3-4 minutes. Sprinkle in the oregano and chili lime powder.
• Add in the garlic followed by the tomato paste. Cook for 2 minutes.
• Pour in the chicken broth and bring to a low simmer. Sprinkle in the green onions, then place the sausages and cooked pasta into the pan. Toss pasta together then add the cilantro.
• Sprinkle the pasta with the cotija and squeeze the lime juice over the pasta.
• Serve up and enjoy!
