Sweet Potato, Carrot, & Ginger Soup! 🍠
Fall is just around the corner and I have a cozy and delicious soup for you to make! 🍲
This soup is packed with strong and mighty healthy flavors to make you feel great! 💪
I love to drizzle a bit of heavy cream and chili onion crunch to make this soup pop even more!
Ingredients 🛒
• 1 tbsp coconut oil
• 1 onion, chopped
• 1 tbsp ginger, minced
• 2 garlic cloves, minced
• 2 roma tomatoes, chopped
• 2 carrots, chopped
• 1 tsp cumin
• 1 tsp turmeric
• 1 tsp garam masala
• 1/2 tsp coriander powder
• 2 tbsp curry powder
• 1 sweet potato, cubed
• 2 carrots, peeled and chopped
• 2 tbsp cilantro, chopped
• 4 cups chicken stock
• Lime juice
• Salt & black pepper, to taste
Directions ✍️
• Heat a dutch on add in the coconut oil. Once, hot add in the onions and cook until you get a little color on the onions.
• Add the ginger and garlic, cook for 30 seconds then add the sweet potatoes, carrots, cumin, turmeric, curry, garam masala, coriander and salt & pepper.
• Pour in the chicken stock then season with salt and pepper. Add in the tomatoes and cilantro then cook for 5 minutes.
• Puree soup then add a spritz of lime juice. Taste for seasoning.
• Serve up and enjoy!
