Did my own little take on chicken piccata tonight and it came out really good!
Here’s what I did 😊
🟡Ingredients:
1/2 cup flour
Garlic powder
Onion powder
Paprika
Italian seasoning
Salt
Pepper
Grated Parmesan Cheese
1 egg
2 chicken breast
2 tbsp butter
1/2 cup chicken broth
1/2 lemon
2 tbsp milk
Fresh parsley
🟨Directions:
1. Mix your flour with the seasonings and Parmesan cheese in one bowl (I don’t measure these just use as much as you’d like to season). And beat the egg in a second bowl
2. Prep your chicken then cut the breast in half
3. Dredge your chicken in the flour mix first, then to the egg, then back in the flour mixture. Repeat for all pieces
4. Heat a pan with olive oil and a little butter, then cook your chicken through
5. Once chicken is cooked through, remove from the pan and add chicken broth to deglaze the pan
6. Add lemon juice of half a lemon (less if you don’t want it as lemony)
7. Cube up 2 tbsp of butter and toss in some flour then into the sauce pan and whisk together until melted to form the sauce (this thickens the sauce)
8. Add any extra seasonings, a splash or 2 of milk, and the fresh chopped parsley
9. Put chicken back in the sauce, or just serve sauce on top to keep the chicken crispy, and enjoy! I just made broccoli and rice for sides with ours
