Make a Roast dinner with me!

I’ve been cooking a lot more lately and tonight I decided to roast a whole chicken which is something I’ve never done before! I grew up watching my grandmother make roast chickens and a homemade gravy and she’s always cooked thanksgiving, so I’ve never had to do it for myself. But as I grew up watching her and been able to cook with her I’ve learned a lot and put my learning to the test. According to my bf this is the best meal I’ve made since we started living together 1 year ago, I’ll take it!! 😂

It’s great because I know exactly what went into this chicken rather than buying a rotisserie chicken from the store, and now we have plenty of leftovers for the weekend. I’m excited to use the bones to make my own bone broth next!

•mixed softened butter with a drizzle of olive oil and about 5 chopped fresh garlic cloves, chopped fresh rosemary and parsley, salt and pepper and spread it all over the top of the chicken

•roasted in the oven at 350°

•made homemade mashed potatoes with a hand masher and added cream, butter, salt and pepper

•roasted carrots and brussel sprouts with olive oil, garlic, salt and pepper

• took the chicken out of the roasting pan when done to rest and poured all of the liquid and chicken drippings from the pan into another pan on medium heat and stirred in milk and flour until I reached a golden brown color and desired consistency
