Ingredients:
Grits:
• 1 cup stone-ground grits
• 4 cups chicken broth or water
• 1/2 cup heavy cream
• 4 tbsp unsalted butter
• Salt & pepper
Seafood:
• 1 Salmon red fillet
• 1/2 lb shrimp, peeled & deveined
• 2 tbsp Cajun seasoning
• 2 tbsp olive oil
• Salt & pepper
Cajun Cream Sauce:
• 2 tbsp butter
• 2 cloves garlic, minced
• 1/2 cup chicken broth
• 1 cup heavy cream
• 1 tbsp Cajun seasoning
• 1/4 cup Parmesan cheese, grated
• Fresh parsley, chopped
• Lemon wedges
Directions:
1. Cook Grits: Boil chicken broth, stir in grits, and cook on low for 20-25 minutes. Add cream, butter, salt, and pepper.
2. Season & Cook Seafood: Season fish and shrimp. Sear snapper in olive oil for 3-4 minutes per side, then cook shrimp for 2-3 minutes per side.
3. Make Sauce: Sauté garlic in butter, add broth, cream, and Cajun seasoning. Simmer until thickened, then stir in Parmesan.
4. Assemble: Serve grits topped with snapper, shrimp, and sauce. Garnish with parsley and lemon wedges.
