Ingredients (Serves 5)
1. Whole chicken, bone-in - 3/4 kg, cut into small pieces
2. Oil - 3 tbsp
Fennel seeds - 1/2 tsp
Green chilies - 3, diagonally sliced
Curry leaves - A few
3. Onion, thinly sliced - 1 medium
4. Ginger garlic paste - 1 tbsp
5. Turmeric powder - 1/2 tsp
Chili powder- 3/4 tsp
Coriander powder- 1 tbsp
Cumin powder- 1/2 tsp
Garam masala powder- 1/2 tsp
6. Tomato - 1 medium, thinly sliced
7. Whole black pepper- 1/2-3/4 tsp
Fennel seeds - 1 pinch
8. Coriander leaves, chopped- 3 tbsp
Curry leaves- A few
Ghee - 1-1.5 tsp
Lemon juice- 1.5 tsp (optional)
Method
1. Heat oil over medium and add fennel seeds. Fry for a few seconds till fragrant. Add green chilies and curry leaves. Cook for a few seconds and add onion and pinch of salt. Cook till onion turns golden and then add ginger garlic paste. Cook for a few minutes and add spice powders numbered 5. Cook over low heat for 1-2 minutes. Add tomato, salt and cook for 2 mts.
2. Add chicken pieces and mix well. Cook covered for 20-25 minutes, stirring in between (do not add water).
3. Meanwhile grind whole black pepper n fennel seeds using a mortar and pestle. Add it to the cooked chicken and mix well. Finally add coriander leaves, curry leaves, ghee and lemon juice, if using. Switch off and serve with appam, porotta, pulao, plain rice etc.
