Today, I got to try another Mala Tang restaurant chain in Singapore. This place is known for their creamy, numbing mala soup that can rival the famous Yang Guo Fu Malatang (my favourite mala in Singapore), where they are similar is various ways. The restaurant offers a sauce station for you to create your own sauce concoction based on your personal preference, and they offer different broth based aside from the classic mala soup base.

I ordered both the soup and dry variations to try as I was unable to make up my mind on which I wanted to have for dinner.

🌶️ 𝐌𝐚𝐥𝐚𝐱𝐢𝐚𝐧𝐠𝐠𝐮𝐨

For this, we got 大辣 (🌶️🌶️🌶️) which packed a fiery punch in the back of my throat. As a spice lover, this was right up my alley where I enjoyed every mouthful of the spice. My friend on the other hand, struggled to stomach the meal as the spice got unbearable within the first 2 bites of the dish.

As for the ingredients, we got vermicelli, luncheon meat, pork belly, seaweed chicken and ngoh hiang (a unique ingredient that is not commonly seen in any mala stalls). Everything was pretty standard, where I enjoyed the noodles which had a good chew and absorbed all the spice and sauces.

🍜 𝐌𝐚𝐥𝐚 𝐓𝐚𝐧𝐠

We got the 小辣 (🌶️) level of spice where we found the broth to be more numbing than spicy. We got a bunch of veggies, mushrooms, fish fillet, spinach maggie noodles and scallops for this bowl. Personally, I enjoyed the fish fillet and scallop the most where both were reasonably fresh for an ingredient that has been sitting out in the refrigerated shelf for a while.

Overall, this is a place I’d go to satisfy my cravings for malatang if it is in the area. Would I choose Zhang Liang over YGF? Maybe, if I am looking for a wider variety in my sauces.
