Homemade Crockpot Mexican Street Corn Dip Recipe

Serving for a 2 qt crockpot. I created this recipe from 2 different recipes that I found online, and got creative.

Ingredients:

16oz of frozen corn kernel (1 in a half bags)

4 ozs of cream cheese

1/2 cup mayo

3/4 cup salsa (I used black bean & corn salsa)

1 cup cubed Fresco Mexican cheese

1 jalapeno diced (I removed the seeds, keep some or all if you like it spicy)

1/2 cup red onion diced

1 stalk of green onion chopped

1 tsp cilantro

1 tsp cumin

1 tsp chili powder

2 tsp ground paprika

1/2 tsp fine salt

1 lime freshly squeezed

*Toss in Cojita Cheese if desired (sadly my local grocery store was sold out)

Instructions:

Toss everything into the crockpot on high for 2-3 hours, stirring occasionally. Serve immediately with your choice of chips/breads/crackers. (I served with Tostitos Hint of Lime Tortilla Chips).

Great as a side dish, and easy to make for any occasion!! I made this for Cinco de Mayo!!! I will be serving it up with homemade Arroz Con Pollo (see my account for recipe) & non-alcoholic margaritas!
