If you love Mexican food as much as me and want an easy to follow recipe from home, then you’ll love this one🪴 Easy to find ingredients and delicious pairings 😋 with ingredients that can be found at most grocery stores.

It’s so delicious 😋 enough for a family dinner night! 🙌

Recipe:

Steak 🥩(Recommend Skirt or Flank however any steak you have on hand will do- this time I used Sirloin since it’s what I found at the grocery store)

Lemon 🍋

Lime 🍋‍🟩

Goya Chicken Flavor Mexican Rice 🍚

Frozen Peas and Carrots 🥕 🫛

Refried Pinto Beans 🫘

Sour Cream

Tomato 🍅(or Pico de Gallo)

Corn 🌽

Salt & Pepper 🧂

Garlic 🧄 (or Garlic Powder)

Cumin

Cilantro 🌿

Onion Powder 🧅

Vinegar (Apple Cider or White Vinegar)

Olive Oil (or any you have)

Cucumber 🥒 (optional)

Sour Cream (optional)

Parsley(optional)

Chili Powder (optional)

Butter 🧈 (optional)

Directions:

👉Step 1: Prepare the Marinade; In a large bowl, mix 2 tbsp Vinegar, 2 tbsp Olive Oil, Juice from Lemon and Lime, Salt, Pepper, Onion Powder, Garlic, Cumin and Cilantro. Add Steak to Marinade and allow it to sit for at least 10-15 mins, Longer for a stronger taste.

👉Step 2: Prepare the Goya Rice per box instructions, Adding in the frozen peas and carrots in half way through. Set aside.

👉Step 3: Heat refried beans. Add 1/2 cup water, Season with Garlic Powder, Salt, Pepper and Chili Powder, mix and set aside.

👉Step 4: Heat Corn per package. Drain water and return to pot. Add some butter and Parsley to taste. Set aside.

Step 5: With the Pan heated to Medium-High, add some oil to the pan. Once heated, Sear the steak about 4 mins per side, longer if you like it more well done. Sear it in some butter near the end to add a golden brown sear to the steak. Remove from heat and allow steak to rest for 10 mins before cutting.

Step 5: Serve with Pico de Gallo or Diced Tomatoes and Cucumber and Sour Cream.
