Make ahead breakfast egg cups
Making these egg cups is my favorite thing to meal prep for the week! They’re so versatile and so many options. 😋 I make a batch on Sunday and eat them all week for breakfast. Easily reheat in the microwave in 1 minute.
This is a base recipe; substitute anything you want or have on hand.
You’ll need:
10 eggs
1/3 cup milk
1 cup of shredded cheese
finely chopped veggies- such as bell peppers, roasted red peppers, onions, spinach, mushrooms
Seasoning to taste. I’m using salt, pepper, onion powder, garlic powder
Meat (optional) such as sausage, ham, bacon, deli meat, ground beef or turkey
Optional: 1/4 cup sour cream or ricotta
Whisk the eggs together in a large mixing bowl. Add remaining ingredients in with the eggs and mix well. Spray a muffin tin with nonstick spray, Pour about 1/4 cup of the egg mixture in each cup. Bake at 350° for 25-30 minutes until the eggs are set. Let cool 5 minutes before removing.
