Coffee protein smoothie (vegan)
This creamy and delicious smoothie is like having dessert for breakfast: a pick me up that includes extra fiber, protein, and low in sugar to keep you from crashing.
Try the recipe below:
Serves 1-2 10 oz smoothies
Ingredients
2C frozen cauli rice or cubed butternut squash
2-3 tbsp peanut butter or PB powder
Handful ice cubes
1/4C dairy free milk of choice (I used @good_karma_foods unsweetened flax)
1 1/4C cold brew or brewed coffee (at room temp or colder)
2 scoops vegan protein powder of choice (vanilla or chocolate)
Optional: handful of softened dates or date syrup to taste
Directions
1. Pour all ingredients into a high speed blender. Combine until smooth, adding more milk as necessary— according to desired thickness.
2. Pour into glasses and enjoy!
