For the Meatloaf:

1 lb ground beef

2 egg

1/2 cup instant oatmeal

1/4 cup ketchup (plus extra for topping, optional)

1/4 cup finely chopped onions

1 tsp salt

1/2 tsp pepper

For the Mashed Potatoes:

2 large russet potatoes, peeled and cubed

6 tbsp butter

1/2 block of cream cheese

Salt and pepper to taste

For the Filling:

1 cup canned corn, drained

Instructions:

Prepare the Mashed Potatoes: Boil cubed potatoes until tender (about 25 minutes). Drain and mash with butter, cream cheese, salt, and pepper. Set aside.

Prepare the Meatloaf: Mix ground beef, egg, oatmeal, ketchup, onions, salt, and pepper. Press mixture into a muffin tin, creating a well in the center.

Cook the Meatloaf: Preheat air fryer to 350°F (175°C). Cook meatloaf in the air fryer for 10-12 minutes. Remove excess grease.

Assemble the Shepherd’s Pie: Add a layer of ketchup (optional), fill with corn, and top with mashed potatoes.

Finish Cooking: Return to the air fryer for an additional 5-7 minutes until the potatoes are lightly browned. Serve hot and enjoy!
