vegan + gluten / refined sugar free. one of my most remade recipes and a perfect healthier alternative to the halloween candy sitting in your cabinet hehe
ingredients:
1/2 cup coconut flour
1/2 cup almond flour
1/3 cup + 1/4 cup + 1 tbsp melted coconut oil
3 tbsp honey
1/2 cup almond butter
1 tsp vanilla extract
1/2 tsp of salt
1/2 cup dark chocolate chips
for the shortbread layer: combine the coconut flour, cup almond flour, 1/3 cup of the melted coconut oil, and honey in a mixing bowl. press onto a pan/dish lined with parchment paper and bake for 13-15 mins at 350 or until golden brown. put in the fridge to cool.
for the caramel layer: whisk together the almond, 1/4 cup of coconut oil, vanilla extract, 1/4 cup maple syrup, and a pinch of salt in a pot over medium heat until melty. pour the caramel mixture over the shortbread and spread evenly. pop in the freezer to harden.
chocolate layer: melt the dark chocolate chips with 1 tbsp coconut oil and pour evenly over the caramel layer. put it back in the fridge/freezer to harden.
take them out, chop them up into bars or bite sized pieces, and store them in the fridge! sooo yummy 🤭
