Seared Halloumi App
- Thinly slice a block of halloumi.
- Heat a pan to medium heat with a tbsp of olive oil.
- Sear the halloumi until golden brown (about 3 minutes on each side).
- Plate and top with peach syrup (thin out some peach preserves with a little water!), crushed pistachio, and fresh mint!
Pickle Tzatziki
- Grab a small mixing bowl and add 1/2 cup of full fat Greek yogurt, 3 tbsp of olive oil, juice of 1/2 a lemon, pinch of salt, and 1 clove of garlic (minced or pressed). Mix together.
- Next, stir in 1/4 cup of finely diced pickle, and 2 tbsp each of finely chopped fresh dill and mint.
- Drizzle a little olive oil and sprinkle some more dill on top.
- Serve with warm pita chips😚🤌
Fried Eggplant Caprese
- First, slice up an eggplant until you have 5-6 slices (or however many servings needed!) And slice up 2 heirloom tomatoes a while too.
- Sprinkle salt on the eggplant and let sit for maybe 10 mins (this helps dry out the eggplant and ensures it won’t get soggy)
- Crack an egg into a bowl and whisk. Pour 1/2 cup of breadcrumbs into another bowl.
- Dip the eggplant into the egg and then the breadcrumbs.
- Pan fry in oil on medium heat until both sides are golden and crispy (about 2-3 min on each side)
- Make the basil oil by first blanching 1 cup of basil (throw it into boiling water for 5 seconds and then transfer to ice cold water…this keeps the basils nice green color when you make the oil, I skipped this step this time because I was feeling lazy lol) Add to a blender with 1/4 cup of olive oil. Blend until smooth and strain.
- Assemble the eggplant and tomatoes on a serving plate.
- Add some burrata, drizzle the basil oil, and sprinkle flaky salt + pepper.
- Enjoy!
Whipped Goat Cheese with Sage Roasted Peaches and Pecans
- First, slice up two peaches.
- Add these to a lined baking sheet along with 1/4 cup of pecans and 1 tbsp of fresh sage. Drizzle with honey (about 2 tbsp) and sprinkle about 1 tsp of flaky salt.
- If you’re serving with focaccia, add this to the pan to toast it!
- Roast on 350 for 7 mins. And then broil for 2 mins (keep an eye on the bread!)
- While that’s in the oven, add 8 oz of goat cheese, along with a splash or two of heavy cream (this thins it out a little so it blends, but also makes it super fluffy) and 1 tbsp of olive oil to a blender or food processor. Blend until smooth.
- Transfer to a serving plate. Top with the roasted peaches and pecans.
- Sprinkle with some more flaky salt and drizzle some more honey 🍯
