For lunch, I love the vibrant, flavorful combination of shrimp nachos complete with guacamole, pico de gallo, salsa verde, and baked tortilla chips, all with a healthy serving of beans. This meal doesn't just tantalize taste buds; it's also packed with health benefits.

Shrimp

Shrimp is a great source of lean protein and provides several vitamins and minerals, including vitamin B12, selenium, and iodine. It's also rich in omega-3 fatty acids, which support heart and brain health.

Guacamole

Made primarily from avocados, guacamole is filled with heart-healthy monounsaturated fats that help lower bad cholesterol levels. Additionally, avocados offer a substantial amount of dietary fiber supporting digestive health.

Pico de Gallo

Ingredients

Shrimp Nachos

• 500g peeled and deveined shrimp

• 1 tablespoon olive oil

• Salt and pepper to taste

• 200g baked tortilla chips

• 1 cup shredded cheese (Mexican blend or cheddar)

Guacamole

• 2 ripe avocados

• 1/2 small onion, finely chopped

• 1/2 jalapeno, seeds removed and finely chopped

• 2 tablespoons fresh lime juice

• Salt to taste

Pico de Gallo

• 3 ripe tomatoes, finely chopped

• 1/2 small onion, finely chopped

• 1/2 jalapeno, seeds removed and finely chopped

• 2 tablespoons fresh lime juice

• 1/4 cup chopped cilantro

• Salt to taste

Salsa Verde

• 5 tomatillos, husks removed

• 1/2 small onion

• 1/2 jalapeno

• 1 garlic clove

• 1/4 cup chopped cilantro

• Salt to taste

Beans

• 1 cup of canned black beans, drained and rinsed

Instructions

Shrimp Nachos

• Heat the olive oil in a large pan over medium heat. Season the shrimp with salt and pepper, then add to the pan and cook until pink and opaque.

• Arrange the baked tortilla chips on a large baking sheet. Sprinkle with half of the cheese, then top with shrimp and the remaining cheese. Bake at 200°C until the cheese is melted and bubbly.

Guacamole

• Mash the avocados in a bowl. Stir in the onion, jalapeno, lime juice, and salt.

Pico de Gallo

• Combine the tomatoes, onion, jalapeno, lime juice, cilantro, and salt in a bowl.

Salsa Verde

• Blend the tomatillos, onion, jalapeno, garlic, cilantro, and salt in a blender or food processor until smooth.

Beans

• Heat the black beans in a small pot over medium heat until warm.

Serving Serve the shrimp nachos with guacamole, pico de gallo, salsa verde, and beans on the side.
