A lot of people told me they enjoyed my earlier school-friendly recipe compilation so I’m sharing more of what I made and ate in hall (meal prep-friendly)!!! I don’t enjoy the process of meal prepping but I do like saving money and eating healthy 😚

Give these a go if you’re trying to save money and eat healthier 💗

1️⃣ Lamb Meatballs

HAHA as you can tell I always have Greek yoghurt on hand so I just whip up some fresh tzatziki to go with these! Super refreshing ✨

These are versatile and pair well with some salad or rice. My favourite way of eating them is with a wrap and some shredded lettuce and tomatoes!

They pack well even if you don’t stay in hall!

2️⃣ Chickpea Curry

I’m a sucker for saucy food and this chickpea curry is the bomb. It’s also vegan-friendly (I add cod for a splash of extra protein)

To make it healthier, I use less fat coconut milk because I feel like the full fat one is a bit too much…but you do you 🫶🏻

3️⃣ Sanpeijiru

I’m a sucker for soy-based broths and this soup is JUST perfect for cold weather!

This isn’t super easy to carry around if you’re coming from home, but if you’re staying in hall it’s a really yummy and heartwarming meal to have.

I add noodles inside but it’s also great with rice 💖

4️⃣ Kimchi Jjigae

Another really simple but comforting meal. This cooks in about 10 minutes and technically doesn’t need to be prepped beforehand.

I usually cut up my vegetables at home, bring it to hall, and just toss it all in a pot. A versatile one-pot meal when you’re time pressed.

For protein, I usually add canned tuna because it’s so easy and goes well with this!
