✨CHIKEN KEBAB AND RICE ✨

* 460g Potatoes

* 330g Chicken Breast

* 60g Natural Yogurt

* 10g Light Spread

* Teaspoon (5g) Garlic Puree

* 80g Romaine Lettuce

* 1 Tomato (85g)

* 20g Yoghurt & Mint sauce

* Seasoning for fries: Italian & cajun seasoning

* Seasoning for chicken: All purpose, paprika, cumin, green seasoning (optional)

1. Cut potatoes into chips, season & cook for around 1 hour on 180 degrees.

2. Cut chicken into small chunks, season & place onto skewers.

3. Cook chicken for 15-20 minutes per side on 180 degrees.

4. Brush the garlic butter over the chicken once cooked.

5. Serve up

✨TERIYAKI CHICKEN✨

* Egg Noodles (I used 1/3 pack of Aldi noodles)

* X1 Chicken breast

* X1 Garlic clove

* 1Tsp Ginger puree

* 40g Teriyaki sauce

* 20ml Light soy sauce

* X2 Spring onion

* 5g Light Spread

* 2ml Sesame oil

* 10g Oyster sauce 175g

✨CHICKEN WITH RICE AND SALAD✨

* X2 Chicken Breast Fillets

* Medium Eggs

* 40g Corn Flakes

* 10g Dunn's River Hot & Spicy Chicken Fry

Mix

* 100g Mixed Peppers

* 5g Light Butter

* 30g Onions

* 110g Basmati Rice

* Chicken Stock

* 1tbsp Tomato Purée

* 100g Iceberg Lettuce

* 80g Cherry Tomatoes

* 80g Serving Sweetcorn

* 10g M&S Reduced Fat Caesar Dressing

* 30g Old El Paso Chunky Salsa

Method:

1. Butterfly chicken breast and season with paprika, all purpose & garlic powder.

2. Crush cornflakes & add hot & spicy fry mix.

3. Coat each fillet in egg & the cornflake mixture.

4. Spray the tray with frylight/ cooking spray, place the chicken on the tray and then spray again.

5. Cook the chicken for 15-20 minutes per side, turning them over half way.

6. Now time to make the rice... fry your peppers and onion in some butter.

7. Add tomato paste, seasonings & washed rice and mix well.

8. Add water and chicken stock and allow to cook on a low heat for 20 minutes or until cooked through.
