Mid-autumn festival is almost here! I’m taking a modern approach to moon cakes by making “Strawberry & Matcha Snowskin Mooncakes” 🍓🍵🥮The texture of the snowskin is soft & chewy (similar to mochi) and the inside is filled with custard and fresh strawberries. I’ve tested several versions and liked this one the best!

Ingredients:
Snowskin:
- Glutinous rice flour - 3/4 cup (80g)
- Rice flour - 3/4 cup (80g)
- Wheat starch - 3 tbsp (40g)
- Caster sugar - 1/2 cup (100g)
- Whole milk - 1 1/4 cup (296mL)
- Oil - 2 tbsp (26g)
- Condensed milk - 1 tbsp (19g)
- 10 Strawberries (for the natural food coloring)
- Matcha powder (culinary grade) - 1/2 tbsp (6g)
Custard Filling:
- Custard powder - 3/4 cup (128g)
- Corn starch - 4 tbsp (30g)
- Whole milk - 3/4 cup (177mL)
- 2 eggs
- Butter - 3 tbsp (42g)
- Caster sugar - 1/3 cup (67g)
- Condensed milk - 1 tbsp (19g)
- 12 strawberries for the center
Dusting Powder:
- Glutinous rice powder (cooked) - 1 tbsp (10g)
