Homemade Mooncake Recipe + Tips! 🥮

When I was searching for mooncake recipes, it was surprising that there weren’t any for 150g molds. I mean… they are HUGE! I thought maybe I should have gotten a smaller one but this was the perfect size to slice & share. So I ended up testing multiple batches to get the right ratios & after days of testing I’ve finally got it! 🎉 It was lot of work but in the end it was very fulfilling to reach the final product 😊Afterwards, I had ran through the recipe again and filmed the entire process. After all the testing, I’ve picked up a lot of tips. Here are few:

- when making the lotus seed paste, make sure the seeds are very mushy before blending, otherwise your paste won’t be smooth.

- when making the dough, I found that using golden syrup vs honey yielded a softer more pliable dough. When I used honey, the dough would break often when wrapping. It’s really hard to find in stores, so it’s best to order online or you can make it yourself.

- Keeping the dough cold makes it easier to wrap. What I like to do is portion everything out, stick it in the frig and take 3 out at a time to assemble.

- When applying egg wash, make sure it’s very thin so it won’t fill in the imprint. And if it does, take a cotton swab to clean it up. This makes the design more defined.

- After each bake (you have to bake the mooncakes in 3 intervals) always cool your mooncakes before applying the egg wash bc heat will cook the egg and will create an unpleasant look on your mooncakes.
