These are my favorite rolls to eat in the summer or whenever I’m at a Vietnamese restaurant. They’re delicious and super refreshing! Making it is pretty simple, you just need:

- rice paper (round shape)

- shrimp

- lettuce

- vermicelli noodles

- mint

Fish Sauce Dipping Sauce:

- fish sauce

- minced garlic

- chili sauce or bird eye chilis

- lime juice

- sugar

- water (warm)

Peanut Sauce:

- peanut butter 1 tbsp

- hot water 3 tbsp

- sugar 1 tsp

- hoisin sauce 1 tsp

Instructions:

1. Pour boiling water over vermicelli noodles and let it sit for 2-3 mins and drain

2. De-shell and devein your shrimps. Blanch them and cut them in half or can keep them whole

3. Take a sheet of rice paper and dip in warm water

4. Place it flat on a working surface and add 3 shrimps in the center, followed by vermicelli noodles on top, mint, and lettuce.

5. Fold in one side, roll, fold in the sides, roll to seal

6. Make as many as you want

7. For the fish sauce, mix sugar and warm water together until melted, then add in the fish sauce, lime juice, garlic and chili.

8. For the peanut sauce, mix the pb and hot water first to thin it out, then the sugar and hoisin

9. Enjoy!
