Fruit Tartlets Ingredients:
- Strawberries
- Blueberries
- Biscuits or graham cracker 15 biscuits
- Butter 1/2 cup
- Powdered Sugar 1 tsp
Pastry Cream
- 3 egg yolks
- 1/4 cup sugar
- 1 1/4 whole milk
- 2 tbsp AP flour
- 2 tbsp Corn Starch
- Vanilla extract 1 tsp
Instructions:
1. Blend your biscuits into a course powder
2. Melt your butter and mix it into the biscuit powder
3. Press into tartlet trays creating the tart shells. (If it’s too loose, put in frig for 5-10 mins until it firms up)
4. Bake the shells at 350F for 25 min.
5. Pastry custard: mix egg yolks and sugar
6. Sift flour and corn starch together and add it to the egg mixture
7. Heat up the milk on the stove top until it foams
8. Slowly add in the hot milk into the egg mixture while whisking continuously. (Don’t let the milk sit or else it will cook the egg, keep it whisking until fully incorporated)
9. Add the mixture into saucepan and continue whisking on med-low heat for 2-3 minutes until it thickens. Also taste test to make sure the corn starch is cooked out.
10. Add into a bowl to cool, then cover with the cling wrap touching the custard to prevent skin from forming.
11. Refrigerate for 1 hour
12. Take the shells out of the oven to cool then remove them from the trays
13. Wash and cut the berries
14. Take the custard out, give it a mix
15. Assemble! Fill the shells with custard and even them out
16. Place the fruits on top
17. Sprinkle powder sugar
18. Cut and enjoy!
