MARGARITA CUPCAKES 🧁🌴⛱️🍹

Baking has become a weekly hobby for me. I dabbled in making muffins, lemon bread, cupcakes and now I thought, let’s make a “fancy” cupcake. My baking is typically inspired by the fruit or food item that is going to expire the soonest. 🍋🍞🥒🧁🍪🍫

I might be entering into my citrus era. I recently made lemon loaf bread and today, I made margarita cupcakes using the two limes we had.

These cupcakes were by far the hardest to make because of the tequila-flavored icing that is hand-made to taste. The recipe called for 4 tablespoons of tequila and I used 2. Thank goodness I used less because that frosting was STRONG 🤣 The smell was radiating out of the mixing bowl and I definitely thought I ruined the frosting. I had my husband try it and he liked it, so I tried it, but only after he went first 🤭 Oops!

The combination of the lime cupcake and the tequila frosting was yummy, but definitely not a margarita replica! So don’t be fooled! It was like taking a tequila shot in cupcake form! Tons of fun to bake tho!! 👩🏻‍🍳
