Airfried Crispy Smashed Potatoes #recipe

Ingredients (serves 1-2 as side dish):

1-2 russet potato, peeled and quartered

3 tbsp olive oil

3 cloves minced garlic

1/2 tsp dried rosemary

1/2 tsp salt

cracked black pepper to taste (optional)

fresh parsley to garnish (optional)

1. Boil potatoes starting in room temperature salted water or microwave potatoes for 5-8 mins until fork tender

2. Drain and leave the potatoes to air dry

3. Flatten the potatoes using a drinking glass, add 2 tbsp olive oil and airfry at 200C for 25 minutes

4. Combine 1 tbsp olive oil, minced garlic and dried rosemary

5. Turn the potatoes over in the airfryer and brush the rosemary garlic olive oil mixture over the potatoes

6. Continue to airfry at 200C for another 3-4 minutes. Any longer and the garlic will burn.

7. Sprinkle salt, black pepper and garnish with parsley to serve.
