An easy personal-sized pizza all to yourself with only your favourite toppings!
This recipe is very friendly and it doesnโt require any special bread skills. All you have to do is throw everything together in the morning, do some folds and proof the dough before putting on the toppings at noon and we have lunch all settled!
Today I enjoyed the personal pizza with fresh tomatoes and mini mozzarella ๐๐

(Makes one personal sized pizza)
1 cup flour / 125g
1/3 cup + 2 Tbsp water/ 88g
1/2 Tsp 2g Instant Yeast
1/2 Tsp Salt / 3g
1/2 - 1 Tsp Olive Oil / 4g
Toppings:
Tomato sauce
Fresh Tomatoes
Mini Mozarella Balls
Basil leaves

โก๏ธ Mix flour, yeast, water and salt and let it sit for 30min.
โก๏ธ Add olive oil.
โก๏ธDo 3 sets of Coil fold, 30 min apart each
โก๏ธ(optional)Overnight cold fermentation in the refrigerator.

โก๏ธ Transfer the dough to generously floured surface and stretch it gently, be careful not to pop the air bubbles around the rim of the pizza ๐๐
โก๏ธProof until (almost) double. Preheat oven at 260C (or the highest temp setting)
โก๏ธ Add desired toppings and bake for 5-8min.
