Ingredients:

2 red snapper fillets (6-8 ounces each)

Salt and pepper to taste

1 tablespoon olive oil

1 cup fresh pineapple, diced

1/2 red bell pepper, diced

1/2 green bell pepper, diced

1/4 cup red onion, finely chopped

1 jalapeño, seeded and finely chopped

2 tablespoons fresh cilantro, chopped

Juice of 1 lime

1 tablespoon honey

1/4 teaspoon ground cumin

1/4 teaspoon chili powder

Directions:

Prepare the Red Snapper:

Season the red snapper fillets with salt and pepper on both sides.

In a large skillet, heat olive oil over medium-high heat.

Add the seasoned red snapper fillets to the skillet and cook for 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork. Remove from heat and set aside.

Make the Pineapple Salsa:

In a medium bowl, combine diced pineapple, red bell pepper, green bell pepper, red onion, jalapeño, and chopped cilantro. In a small bowl, whisk together lime juice, honey, ground cumin, and chili powder until well combined.

Pour the lime-honey mixture over the pineapple mixture and toss until evenly coated. Adjust seasoning with salt and pepper if needed.

Serve:

Place cooked red snapper fillets on serving plates.

Spoon the pineapple salsa generously over the top of each fillet.

Garnish with additional cilantro leaves if desired.

Serve immediately and enjoy the burst of tropical flavors!
