QUICHE! Is one of my new favorite meal preps for those busy weeks where i want an easy breakfast, want an easy lunch or want to entertain guests in a tasty way!
For this high protein quiche recipe i do:
8 eggs
1/2 cup milk
a couple big handfuls of spinach, chopped
1/2 onion, chopped
a handful of cherry tomatoes, chopped
salt and pepper to season
+ garlic and herb goat cheese. YUM
frozen pie crust ( i get mine from aldi)
Whisk up the eggs and milk together with the seasonings. Chop up the onions and suatee in a pan with butter. Then chop the spinach and add to the pan until it's nice and wilted.
Add cooked onions and spinach, tomatoes, egg mixture all into the frozen pie crust and top with crumbled up goat cheese.
Bake at 350 for 45-55 minutes or until the eggs are fully cooked and the crust has a nice browning to it!
Cut up into 4-8 slices and serve as a main meal or smaller slices with your meal for a great high protien and veggie option!
