Tortellini Soup

Ingredients -

1 1/2 Lb Italian Sausage (Spicy)

1 Whole Yellow onion

6-10 Cloves Garlic

5 Cups Chicken Broth/Vegetable Broth

2 Tbsp Tomato Paste

2 Tbsp Olive Oil

1/4 Cup Pino Grigio/ Chicken Broth

12 oz Tortellini Pasta

1 1/4 Cup Heavy Cream

28oz crushed tomatoes

Handful Chopped Kale

Parmesan Cheese (Fresh)

Ref Chili Flakes

Seasoning

Pinch of Salt

2 Tsp Italian Seasoning

1 Tsp Oregano

2 Tsp Garlic Powder

2 Tsp Onion Powder

1 Tsp Creole Seasoning

Steps 1. In a large pot on Medium Heat add olive oil. Next add the Italian sausage, Chop and cook fully until brown and crispy (8 minutes); add chopped onions, and garlic into the pan and cook until the onions and garlic are translucent and fragrant (5 minutes). Add Pinot Grigio or Chicken Broth and season with the listed seasonings. Lastly add Tomato paste and mix until well combined.

Step 2. Add Chicken Broth, Crushed Tomatoes and Heavy Cream into the pot and bring to a boil. Once Boiling add the tortellini pasta and cook 8-10 Minutes (follow directions on pasta package). Once done add in the kale and mix.

Step 3. That’s it I like to Top it with Sun dried tomatoes, freshly grated Parmesan Cheese Red Chili Flakes and the reserved Italian sausage I told you to save. Enjoy!!
