Apple pie cookies 🍏🍂👻

These Apple pie cookies are probably my new favorite cookie and with it finally being fall I can’t think of anything better. A delicious cinnamon cookie topped with homemade Apple pie filling 🤭🤤

Apples 🍏

3 apples- peeled and cut up

1/4 c brown sugar

2 tbsp unsalted butter

1 tbsp corn starch

1/2 tsp cinnamon

-melt butter in sauce pan add apples, brown sugar, corn starch and cinnamon. Let thicken for a few mins. It’ll start to bubble and let it go for a few until thickened.

Cookies

3 1/4 cup flour

1 tsp baking powder

1 tsp cinnamon

1 tsp corn starch

1 tsp salt

1 cup unsalted butter- melted

1 cup brown sugar

1/2 cup sugar

1tsp vanilla extract

2 eggs

Cinnamon sugar mix

3 tbsp butter-melted

1/2 cup sugar

1 tsp cinnamon

Mix dry ingredients together. In a mixing bowl mix butter, sugar, brown sugar, eggs, vanilla extract together. Add dry ingredients to wet and mix until just combined. Let sit in fridge for 10 mins. Use large cookie scoop to place on baking tray. Push in with the back of a tablespoon measuring stick and bake for 12 mins at 350. Pull out and push in again and bake for 4 more mins. Let cool completely. brush the cookie sides in melted butter and add cinnamon sugar mix. Add apple pie filling in the indent and drizzle powder sugar glaze on top.
