Lemon blueberry cottage cheese pancakes 🥞

I think I’m a little late to the trend but what’s that saying? Better late than never? I am OBSESSED with these. Lemon blueberry is one of my favorite flavor combos and these are to die for 🤤💛

🍋 pancakes

2 tbsp melted butter

1/2 c cottage cheese

3 tbsp sugar

1 tsp vanilla

A dash of lemon extract

1 egg

1 c flour

1 tbsp baking powder

Salt

Water

🥞 method

Bled butter, cottage cheese, sugar, vanilla extract, lemon extract and egg. Add to flour, baking powder and salt. Mix together. It will be super thick so I add water to thin it out a little and cook on medium heat and enjoy with maple syrup 🤭
