i got a pork tenderloin cut from aldi for around $6.

- i added about 1.5 cup of beef broth (i had some left over from birria tacos)

- 2 small onions

- the pork cut into smaller pieces (1.85 pounds)

- about 12 red guajillo chiles (deseeded)

- 2 tablespoon of salt

- 3 teaspoons of red pepper flakes

- 3 teaspoons of cayenne pepper

- 2 teaspoon of black pepper

- 2 teaspoons of garlic powder

- 2 teaspoon of onion powder

- 2 bay leaves

i cooked everything for around an hour and then removed all ingredients besides the pork and blended until smooth. i strained the sauce over the meat to get out any lumps of peppers and seeds. i let the meet cook with the sauce for around 2 hours on low. i pulled the meat apart and began the assembly process. i used about 8 cups of masa all together. i added a teaspoon of baking powder and 2 teaspoons of salt. i added water until it was able to form into a ball and firm/springy when you push your finger into it. i used foil because i didn’t have time to go to a mexican market and corn husks on amazon are like $15 for 30 of them. i flattened about a half a cup of masa mix on the foil and added about 3 tablespoons on meat with a bit of sauce and i folded the tamales. i don’t have a steamer (yet, i need to thrift one) so i added extra foil balls to the bottom of my dutch oven and added water the bottom. this created a barrier so the tamales don’t touch the water but are still able to be steamed. i steamed each for around 15 minutes. i enjoyed these but in the future i will be adding whipped lard to the masa mix and a bit more seasoning! i was afraid of over-seasoning the masa but it could have handled another few teaspoons to the masa mix. #makedinnerwithme #tamales #dinner #dinnerideas #easyrecipe #recipes #makedinnerwithme #dinnerrecipe #easydinnerrecipe #Lemon8Diary
