Am I the only one who eats pumpkin year-round? It’s the perfect ingredient bc of its natural sweetness and airy texture. You don’t need to add a ton of sugar and oils for these muffins to be decadent and bouncy 🥰 the perfect afternoon snack 🎃
Ingredients:
1/3C maple syrup
1/4C milk of choice (I do 2%)
1tsp vanilla extract
Spice: 1 1/2tsp cinnamon, 1/2tsp nutmeg, 1/2tsp salt, 1/4tsp ginger, 1/4tsp ground cloves, 1/4tsp allspice
2 large eggs
1C oat flour or blended rolled oats
1 scoop vanilla protein
1/2tsp baking powder
1/2tsp baking powder
1/3C semi sweet chocolate chips or chopped dark chocolate
Whisk together pumpkin, maple, milk, and vanilla. Add in eggs one at a time. Mix in all dry ingredients. Add in chocolate but save about 1/4 for the top of the muffins. Put batter into muffin tray and then top with remaining chocolate. Bake at 350 for 16-20 minutes. Enjoy 🤤🤤
