Quick & easy toddler dinner

Ground beef quesadillas with green peppers & a side of sour cream and taco sauce! Pictured was my portion.

We served Logan’s as just a cheese quesadilla with the meat in the side, and paired it with sliced green peppers and tomatoes. He also wanted grapes with dinner, so he got some fruit, too!

Dinners, especially with kids, do not have to win any awards or be some extravagant meal. We try to make sure to offer each food group at most meals, but don’t overly stress about it. I know it was hard for me to think of meals when Logan started eating with us, as if he couldn’t just eat some version of what we were eating!
