42g of protein in 2 of these Buffalo chicken stuffed peppers!
Ingredients:
Rotisserie chicken shredded (because it’s easier and mom life!)
1/2 cup of Fage Greek yogurt
1/4 cup of franks Buffalo sauce
1 tbsp of Trader Joe’s ranch seasoning
3 bell peppers
Shredded cheese
Directions:
Take shredded chicken and combine in a bowl with Greek yogurt, franks Buffalo sauce, ranch seasoning, and 1/3 cup of shredded cheese.
Cut bell peppers in half and discard seeds
On a baking sheet place bell peppers inside facing down and coat the top in olive oil
Bake solo bell peppers for 5-7 minutes at 375 degrees or until “blistered”
Flip bell peppers over and fill with chicken mixture, top with shredded cheese
Bake for 20-25 minutes at 375.
