typically tteokbokki recipes require you to use chicken / anchovy broth to bring out the flavour… but we wanted to cook tteokbokki with leftovers from our fridge, so we gave it a little twist! and it turned out really deliciously, w the depth of flavour that makes it 🤤 do try it out!
ingredients 📜
1/2 onion
1 tbsp gochujang
10 pieces of ricecake
cooking oil
1 cup water
pork belly (optional)
cheese (optional)
eggs (optional)
steps 🖊️
1. slice onion
2. in a heated oiled pan, fry onions till fragrant
3. once fragrant, add water (pour the water on the onions, try not to pour it directly on the hot pan as it will splatter) and gochujang
4. once it boils, add ricecakes and cook for 5-6 mins / till the sauce mixture reduces
5. top it off with any ingredients you like! we threw in pork belly slices in the last 30 seconds and cheese in the last 10 seconds :) we added soft boiled eggs too (that we cooked in the kettle, recipe here)
SO YUMMY! had this meal w kimchi pancakes 🤓 best if you wish to clear out your fridge!
